I'm gonna get the 20 ft boards for plates cuz I won't have to cut near as much. The ceiling height requires no cuts to studs with single top and bottom plates...
Now I can use top of existing Sheetrock ceiling to line up cross braces...all too easy...

Also there's an electrical box where hot tub was connected. I can just use those wires for outlet? It's 120...

The hot tub could have been plugged into 120. But one of that size is usually 240. What type of outlet is on the wall? If you can tell me how many wires are in the box and what color they are I could possibly tell you what the voltage is and if you could use what is there for standard 120 volt receptacles.

It was 120 dumbo...actually that tub was either or but was set up 120...
