Not without permission from id software, as the Quake III models are copyrighted. This counts player models, item models, and map models. Textures, skins, and other graphical elements are also copyrighted.

Still no go. The assets used in Quake 3 are property of id Software and cannot be used in any form outside of Quake 3 without id Software's explicit consent.

Do you know of any free 'Health' and 'ammo' models out on the net that I can use?

Use Google to search for "Free 3D models" or something like that. Maybe search for 3D models released under a creative commons license. I bet you'll be able to find something.

The content for OpenArena is GPLv2, IIRC. I doubt that would be compatible with whatever you're doing, but whatever.

You'd need to check the specific licenses for everything, but I believe you can use OpenArena assets if your game is also released under an equivalent or free-er license than the one the asset is currently licensed under
