yeah i like the idea of smoking organic, free range or wild meats like venison, ostrich, buffalo... that kind of stuff. Did some organic pork portuguese chourico sausage a few weeks back. That's yummy shizz.

Oh fuck, sounds tasty. Buffalo is pretty popular around here as well. Haven't tried any though.

Buffalo flavor is a lot stonger than beef.
