Mashed potatoes don't do much for me, but this thread has reminded me how much I love latkes as well as colcannon or however the fuck you spell that Irish shit with mashed potatoes and cabbage.

some at the outlet store, ready made that you just have to reheat in a microwave on place/on the spot, instead of a bag of chips or pretzell... Or out of a special dispenser/distributer at work or school instead of all the other junk foods.

Start with good, cold, thick mashed potatoes from last night or the night before. To these add 1/4 cup flour for every cup of potatoes. If your mash is on the thin side you may need a little extra flour. Add salt and pepper to taste, then mix it all together (with your hands is easiest) into a stiff paste. My potatoes had about 1/4 cup sautéed onion mixed in, which is delicious but not necessary.

Using about 1/2 cup of potato mixture for each cake, shape into round, flat patties about 4 inches across and 1/2 inch thick.

Cook the potato cakes in a few tablespoons melted butter or hot olive oil, in a heavy-bottomed pan, on low heat, about 8 minutes per side. Turn the heat up during the last minute or two of cooking on each side to brown them.



Pretty sure the second, although I cant' locate the site again has the following recipe

~ 1lb fresh cooked salmon or 1 can canned salmon
~ 3 cups prepared mashed potatoes
~ 2 egg whites
~ 1 tbsp chopped parsley
~ 1/2 cup diced green onion
~ salt and pepper
~ bread crumbs

In a bowl, mix the mashed potatoes together with the egg whites and parsley until smooth.

Break the salmon up into small chunks and fold them and the onions into the potatoes.

Season to taste with salt and pepper.

Heat some oil in a large skillet over medium heat.

Form the mixture into 1/4 cup patties and coat with the bread crumbs.

Fry in the hot oil 3 to 5 minutes on each side or until golden brown.

Drain on paper towels.

Serve and Enjoy!


I've done the second salmon ones about a month ago.

Mouth watering again..... They tasted so good :up: :up:

mashed is my least fav potatoe

mostly cuz i'm too lazy lol i just throw them in the oven and bake them.

those potatoe pancakes sound really good to me tho!
