Very hard question. Based on the amount of dedication I've given these two games over the last decade I have to go with:

if you get into it, it's horribly addictive. Good points include probably deepest open world environment in any game, very (IMHO) atmospheric graphics and environments, and actually-surprisingly-not-bad plot for an RPG. You really need one of the graphics mods for distant lands so you can see where the hell you're going though. Bad points include lousy animations and horrifically slow character movement at the start of the game.

I found the open world to be anything but deep, and the plot basically non-existent; comprising my major gripe with the game. That it was a fantastic engine driving a wasteland of a world with no story or driving force compelling the player to care about anything. It was such a grind where seemingly the only reason to keep playing it was to level up. It seemed like the game's sole purpose was to waste time, giving nothing back to the player. No sense of accomplishment, no "fantasy" or imagination, and above all, it had no life.
I'll explain the lack of depth, since you said that you thought the game had it; but that confuses me since I saw the opposite.
The world presented in the game was big, but it was like a vast lake that was never more than knee deep with water. You could travel everywhere, and investigate everything, but all the game ever gave back was a hole to crawl around in and some critters to kill. All the quests that sent you out into the world or through the cities were laborious errand-boy quests with no thinking or challenge. Just go here, get that, and bring it back. Nothing was really very adventurous, engrossing, or even entertaining.
The NPCs were also all very stale and mostly just someone to work for. They also had a creepy aspect of having no children. There isn't one child in the entire game.... like it was set in a "children of men" sort of age were everyone was dieing off. It just added to the general solitary feeling already created by being completely alone, with no party or diverse methods of doing things. The only creativity came in coming up with various ways of exploiting the engine (trading the same things endlessly with someone for profit, making super powerful artifacts by exploiting the infinite intelligence afforded from exploiting the potion making, etc...)
The expansion pack that was off on the winter island with the tribal people and it's right of passage quests was interesting... everything else just mindless solitary hack-n-slash gameplay repeated endlessly until I got so put off by it that I couldn't even continue trying to beat the main storyline but only wanted to erase the thing and forget it.

MP: Q3 obviously, then BF1942

SP: Hmm, very hard to choose. If you look at hours spent then Oblivion would top the list. And from a number of playthroughs probably Quake II.

MP: Tribes 2 made the biggest impression on me, i think. Played the shit out of that for at least a year. Close seconds are BF:2 and BF:V
SP: Rome Total War probably. Played through that a bunch of times.
