not doing a cold smoked salmon (lox), doing it in the Haida Indian style which involves smoking it twice (soaking it in maple syrup between sessions), and a lot of drying. Verging on jerky, it's fucking orgasmic.
The last salmon I smoked was a bit different but turned out amazing. It was thick moist and flaky.

yeah apparently it's an easy way to add smoke flavour to food. haven't tried it yet but it should be dead easy.

When you smoke, what kind of wood do you use?

depends on what i'm smoking but for the salmon it's alder. Last time I used maple for the salmon.
Hickory and mesquite are also good but the general rule is use some kind of hardwood.

Yeah, everyone around here drools over mesquite, which is overabundant, but I find that other kinds of wood are better in some situations.
In fact mesquite is basically a plague around here. You can't turn around without running into a mesquite tree. And fucking forget trying to kill one.

heh that's kinda funny. alder is like a weed tree up here. many consider it a nuisance and they spring up everywhere.

My chicken is in the oven and almost done, while my gf was checking on it, surviver darwin catburry ( my baby cat ) almost jump straight into the oven, well, she was already standing on the indide door of it I don't know how she didn't get burned from it.
