Recipe Thread

As signa suggested, here's a thread to post recipes in.

I'll start with a recipe i kinda invented:

Spaghetti with Leek-Lemon Sauce:

Ingredients:
  • Leek
  • Heavy Sour Cream / Crème Fraiche
  • cream
  • 1-2 Lemons
  • 1-3 teaspoons of good(!) Mustard - i'd recommend dijon mustard. it must be really good - otherwise it's better to leave it out.
  • 2-3 bay leafs
  • white wine
  • some clear soup (stock cube?) ~ about 0.1 to 0.2 l
  • olive oil
Plan:
  1. Cut the Leek into fine, thin slices (2-3 mm)
  2. Heat oil in a pan, put the leek in it
  3. before the leek gets brown, pour a fair amount of wine and the clear soup into the pan (so that the wine level is about 0.5 to 1 cm) - add the bay leafs and let it cook for about 2-3 minutes
  4. add sour cream and cream until you get a sauce of desired consistency - if it gets to creamy, add some water; if it gets to liquid, let it cook
  5. add salt, pepper, mustard and lemon juice until you feel it tastes right. i like it rather sour with a slight note of mustard; but this is up to your taste. this part requires some cooking skills though.
Optional:

Either add small shrimps or small sticks of bacon. put them into the pan just before the leek.

Pasta putanesca literally means "Harlot's Pasta". It was made by the ladies of the night in Italy after a days work. It was a throw things together from the fridge thing. Also, no meat so it was cheap to make too. Perfect for a bunch of sluts like you.

fucking frenchman

Here is my recipe for fast food:
- 1/2 or whole avacado
- soy sauce
- olives
- bread

Mash the avacado and add soy sauce as you do so, or before you do so, whatever. When it becomes a suspension-like paste slop it on a peice of bread and spread olives on it. Put a peice of bread on top to complete the sandwhich. Eat.

I made some excellent baked ziti last night, so I'll share. :icon32:

1 box penne regate pasta
2 bags shredded mozzarella
1 pint ricotta cheese
1 jar red sauce (spaghetti sauce)
romano and parmesian cheese
classico's original basil pesto
***********************************

In large mixing bowl, mix ricotta cheese, 1/4 bag of mozzarella, 3/4 jar of sauce, and about 4 tbsp of pesto, into a thick, pink paste. Set in microwave until later.

Preheat oven to 350° fahrenheit

boil about 4 cups of water -- add full box of pasta. Boil until al dente. Strain and rinse with warm water.

Microwave the cheese and sauce mix for about 1.5 minutes, stirring halfway through.

Use a very tiny bit of vegetable oil to line the bottom of a casserole dish.

Mix cheese and sauce mix with the pasta, until it's consistent throughout.

Spoon mixture into baking dish evenly -- no more than 2 layers of noodles thick.

Add a layer of shredded mozzarella evenly on top - about 1/4 inch thick.

Spoon one more layer of mixture evenly on top of cheese.

Mix up 3 shredded cheeses -- half bag of mozzarella, 1 cup of romano, 1/2 cup of parmesian. Sprinkle this on to melt on top of the dish.

Bake at 350° for roughly 10 minutes -- long enough to melt all the cheese, but be sure not to let cheese brown any.


Add caesar salad, some herbed olive oil and sliced baguette, and a bottle of merlot, and you've got a great meal. :icon32:

whole wheat pizza

1/2 cup white flour 11/3 cup Whole wheat flour
water till dough feels stretchy.
tiny bit of quick rising yeast.. half of spoon

whole wheat is a mother to work with

cheese
-feta
-mozza
-cheddar
-ricotta "mmmmm"

add whatever you want .. i'm a nut for wild buffalo ..it's like the best tasting meat ever.
sometimes i use cariboo or Muskox meat .

bake 13 minutes at 450F

lasgna

boil 10 whole wheat lasagna noodles

stir fry all kinds of vegetables ..lots of veggies ..whatever is left over i make spaghetti sauce out of ..mmmmm

hamburger meat of choice

layer a small amount of spaghetti sauce on the bottom of a suitable sized pan.
add 4 lasagna noodles on top.

next layer ..veggies and meat and the rest of the jar of spaghetti sauce

3 noodles

in a bowl mix ricotta cheese , cottage cheese , small amount of feta cheese and one egg.
make this another layer.

add 3 noodles

load a ton of mozza ,some cheddar .. sprinkle parmessan cheese then sprinkle paprika on top .

baking time varies depeding on the veggies ..try

1 hour at 350 ... cook till mozza turns slightly brown ..... do not burn .. but do not open oven often.

Bolognese Sauce:

Ok... here it is: a recipe for really good bolognese sauce. it's from far relatives that run a restaurant in norther italy.

Things you need:
  • minced meat / ground meat
  • tomatoes (put them in a mixer so that you only have a sauce without any solid pieces in it)
  • the usual suspects: bay leaf (2-4), thyme, oregano, rosemary, etc ...
  • a bit red wine - not to much though

    and... here comes the trick:
  • carrots
  • celleriac - both rasped

    ... the rate meat:carrots:celleriac should be (1-1.2):1:1
plan:
  1. take a large pot
  2. fry the meat in small portions while constantly stiring it so that you get lots of tiny pieces. after finishing one portion put it into some bowl; it does not matter if it gets cold.
  3. now fry the carrot and celleriaic
  4. put the meat back in and add the wine (1-2 mins cooking now)
  5. add the tomato sauce and the spices
  6. let it cook for about 20 minutes with a cap on the pot, then let it cook for about 1-2 hours without the cap on low heat - the point is to reduce the water in the sauce: less water -> more taste / liter :smirk:
as the sauce does loose that much when you rewarm it in a microwave, you can eaily make lots of it in one turn :)
