"defekt" is usually only used in conjunction with technical devices, machines etc. For example:
"Mein PC ist defekt"
For silmple items you use "beschädigt" (if it's not completely broken), or "kaputt", if it's completely wrecked.
So: "Mein Ei ist kaputt"
btw: "Ei" is used in german as "nut" in english, so if you'd say "Meine Eier sind kaputt" you may get pityful glimpses.
