should I dual channel my memory or not?
what's best for an office computer type of usage? wouldn't a gig of ram fair better with multitasking between light processing programs, instead of 2x512 dual settup? no video gaming is going to take place

The only benefit that I can see of a single stick setup is to allow expandability in the near future. But even then, it's recommended that you buy dual-channel pairs at the same time, so buying two 1-Gb sticks seperately still might not net you a 2Gb dual-channel setup.
Definitely go for dual if feasible. Memory's cheap now, dual 2Gb isn't much more....
