Well it depends on the game, In blur for example I do like to be able to see behind and besides me for obvious reasons and I'm fairly decent at Blur. In racing sims I love the cockpit view but never use it cause it's too limiting but imagine if all the gages and info was displayed on stuff that's in the car, like GPS, speedometer, laptop screen to keep race details.
It would be cool if the menu of a game was actualy the cockpit of your car so you would never actualy leave the car to go from race to race. You simply look over to your right (or left if you drive on the wrong side, yeah, that's right, I said WRONG side)
From there you could actualy choose what you're doing, like racing, driving around or whatever from the menu on the screen that's in the game located in the cockpit of your vehicle. I know it sounds silly but it's got it's uses and that comes into play even moreso if they create some glasses that you can wear that displays the screen. It'd be like the old VR stuff they came out with in the 90's except with better graphics and more immersive and less bulky which is pretty much all that was wrong with it back then.
Also useful in the cockpit of a mech type of game or flight sim or space sim etc... I see possibilities.
