I just had some fried eggplant and zucchini in a coconut curry sauce, with rice and soy/lemon-marinated chicken.  Zounds!

The trick with cheese on something like this is that you bake it all together for about 10-15 minutes.  The cheese will brown and have more texture to it, it wont gum up your mouth.

Are you talking about real parmesan, or the powered kraft shit in a tube? I never touch the crap stuff. Proper parmesan is an excellent salad garnish.
It's the Butyric acid in the parmesan - all parmesan - that makes it smell of puke.
