So I bought an Athlon 64 3000+ today...
I'd get at least 400 watts. Avoid no-name brands. I've got an OCZ Powerstream, which are very good units, but a little expensive. I've also been very happy with Enermax PSUs. I hear Antecs are swell.
If you do get a lesser known brand, you should probably get one that's rated at a higher voltage. Some PSUs state their peak power, which is something you don't care about. So if they state it's 400 watts, it may only be 300, which is a little low for current and future hardware.
P.S. My PowerStream is rated at 520 watts, that's what it says on the box. It's peak is actually 620. Overkill, yeah, but I got it when I RMA'd the 420 watt unit.

I ran my AMD 3200 64 and my GeForce 6800 GT OC plus 1 gig of DDR400 with a 250 watt with no problems, but I thought that maybe I should upgrade a little and went with a 350 watt antec. To be honest I really dont think I even had to upgrade. The 250 watt was a powerman and I've never had a problem with them. Guess I just wanted to be on the safe side.
