Yeah it depends on your location I think. A lot of people prefer the red sauces over the white sauces, I'm a big creamy sauce fan, eggplant is ok, I like it but it's the creamy cheesy shit that I like. Guess it must be all those poutines I had as a kid. (French fries with gravy and cheese) Which is also good shit.

And you forgot the most important ingredient Grudge, the CHEESE!!! Parmegiana doesn't count imho.
